William and Fergus' Spaghetti and Meatballs
A winning family favourite. Every time!
Serves 4 - 6

For the meatballs:
1 x 400g pack of mince
1/3 of a courgette grated
1 carrot grated
1 egg
1 clove of garlic, crushed
a handful of breadcrumbs
half a cup of parmesan
2 teaspoons of herbs, dried or fresh (oregano works best, but can be mixed)
seasoning
flour for cooking
For the sauce:
one onion, finely diced
2 cloves of garlic (crushed)
olive oil
2 tins of chopped tomatoes
1 jar of passata
a glug of wine
herbs
Method:
Combine all the meatball ingredients into a bowl, and mix well. Kids are great at this! Just no licking of hands. make into little balls of nutrition. dip in flour and brown in a frying pan for ten minutes before setting aside.
Meanwhile saute onions in a dutch oven for 10mins on a low to medium heat in a little olive oil or butter. Add the garlic for the last 2 minutes. the deglaze the pan with a glug of wine and then add the tomatoes and herbs. bring up to heat and let simmer for 20 minutes.
Add the meatballs to the sauce and bake for 30 mins at 180 degrees C, until the the meatballs are cooked through.
Serve with pasta and salad, and of course, garlic bread.
